Family Makes It Better

HURRAY FOR FRIDAY!!! I love the weekends, and I maintain that weekends in Colorado are second to none…the only thing that would make them better is a beach nearby :)   So, when I last left y’all I was in a pretty down mood.  My knee is still really sore, and I’m just tired of having these little physical setbacks.  I’m planning on resting it (sorta) by walking slowly today and skiing tomorrow.  That’s rest, right? :)   Anyway, I’ll be honest:  my biggest fear is that all of the hard work I’ve been putting in to lose weight will go spiraling down the drain.  Scares the crap out of me.  So, after talking to Nate about it on the way home last night, we stopped at the dog park that’s about 1/8 of a mile from our house.  It was a great reminder of how thankful I am that this is a view we get to see every day:

The dogs were STOKED to go to the dog park!  They started whining and prancing in the back seat the second we pulled into the parking lot!  Bunker loves his sticks…he’s the most well-behaved boy when you’ve got a stick in your hand!

When we got home we were deliberating over what to make for dinner.  We didn’t really have any food in the house because I haven’t been to the store in a while, and we have eaten all the veggies we had on hand!  Nate had the great suggestion that we just order pizza :)   That guy really knows the way to my heart!  I got mushrooms on my half and had 3 slices:

Then I made dessert:  Baked Peaches!

  • 2 peaches (can be firm as they’ll soften up in the oven), halved and pits removed
  • 1/2 cup walnuts
  • 1/4 cup sugar
  • 1 Tbsp flour
  • 2 Tbsp butter, very cold and cubed

Heat the oven to 350.  In a food processor, process the walnuts, sugar, and flour.  Add cubed butter and process until the butter is pea-sized.  Pile the mixture onto each half of the peaches.  Bake for 30-35 minutes.  I took about 1/4 cup of yogurt and a little vanilla extract, mixed it together, and stuck it in the freezer while the peaches baked.  It was the perfect topping!

We watched The Office and 30 Rock and then, in typical Thursday night fashion, fell asleep on the couch.  OOPS!  This morning I got up and did 25 minutes of yoga, then grabbed 2 frozen waffles out of the freezer to reheat in the oven.  These were homemade waffles that I let completely cool and then wrapped and put in the freezer :)   I topped mine with the packet of Justin’s Maple Almond Butter:

And about 2 tsp of shredded coconut.  PERFECT combo!

Thanks so much for all of your kind comments!  I must admit, I am still fairly bitter, but I’m realizing that (again) I deserve to be happy with my body, and that’s just going to involve me taking the steps to get there.  If I can’t walk as much or as far or as fast, I CAN still walk.  I can do weights at home, core work, and eat smaller portions of healthier foods.  I can make this work, and I need to stop being a baby about it!  I was also super inspired by Dori’s amazing post recapping her Core Fusion Challenge!  I’m also almost done with Whittle My Middle, and am now looking to do the 100 Push-Up Challenge next.  Keeping my body guessing is probably going to be key to seeing great results!

What are your plans this weekend?  I’ve heard it’s supposed to be GORGEOUS all over the country (for the most part)! We are going to go ski Winter Park tomorrow and then hopefully get back in time to take the dogs for a full round at the dog park!
